A Healing Chinese Broth for Winter
One of our favourite winter rituals is preparing a nourishing Chinese-style broth.
This simple recipe is warming, grounding, and deeply restorative.
Winter Nourishing Chicken Broth
Ingredients
1 whole organic chicken or chicken carcass
2 litres filtered water
6 fresh slices ginger
4 cloves garlic
2 carrots, roughly chopped
1 brown onion, quartered
4 dried red dates (jujubes)
1 tablespoon goji berries
1 cinnamon stick
1 tbsp stock powder
Salt & pepper to taste
Method
Place all ingredients into a large pot.
Bring to a gentle boil, then reduce to a low simmer.
Simmer for 3–4 hours.
Strain if desired and season with sea salt.
Enjoy as a warming broth or add vegetables and shredded chicken to create a nourishing soup.
